Moqueca
Ingredients: fish, garlic, lime, spring onion, red onion, bell pepper, tomato, cilantro, coconut milk, paprika
- 2 lbs fish
- 5 cloves garlic, grated
- 1-1/2 limes (wash and zest, juice)
- 1 bunch spring onion, chopped (separate white and green)
- 1/2 red onion, chopped
- 1/2 yellow + 1/2 red bell pepper, chopped
- 4 plum tomatoes, chopped (or 15 oz can)
- 1 Tbsp paprika (Hungarian sweet)
- Pinch red pepper flakes
- 1 large bunch of cilantro, chopped (1/2 Market Basket bunch)
- 14 oz can coconut milk, stirred
- marinate:
- fish
- lime juice/zest
- garlic
- salt + pepper
- cook:
- red onion
- white spring onion
- add:
- bell peppers
- paprika
- red pepper flakes
- 1 tsp salt + lots of pepper
- add:
- tomatoes
- green spring onion
- add cilantro
- when vegetables are softened, scoop out half and layer fish on top of remaining, then cover with scooped out vegetables.
- pour over coconut milk, stir in gently without disturbing fish
- simmer for 20-30 minutes
- serve with white rice and lime wedges.
